Corn chips & guac (low sodium low carbs)

Corn chips and guac don’t have to be carb loaded if you add carrot and celery sticks! The guacamole is full of zesty freshness and you won’t even miss the salt! Serve as a light dinner or lunch.

Instructions

Step 1
Scoop out the flesh of the avocado into a bowl and mash with a fork.

Zest and juice the lime. Crush the garlic. Add both to the mashed avocado and stir.

Chop the tomatoes into small bits and add to the bowl.

Finely slice the spring onion and add.

Half the jalapeño and scoop out the seeds. Finely slice and add.

Coarsely chop the coriander and add.

Drizzle over a little olive oil and grind plenty of black pepper over it for flavour. Mix everything together. Enjoy!
