Vietnam Fried Rice with Edamame

Instructions

Step 1
Cook edamame or green beans according to package.
Step 2
Cook the rice according to package using broth instead of water.
Step 3
In a hot skillet add oil and stir fry meat. Add just a little soy for flavor, but not too much or the dish will get salty (1/8 to 1/4 Tbs).
Step 4
Remove meat from skillet and set aside. Add garlic, onion, pepper, and 1/2 Tbs soy to pan.
Step 5
Stir fry until the onion is cooked through. Stir in beaten eggs. cooking until eggs are done. Eggs will not and should not look like breakfast scrambled.
Step 6
Add vegetables, cooking until heated (add a little water and a lid to steam them if needed).
Step 7
Return chicken to pan, stir in rice. Add remaining soy. Serve with edamame or green beans on the side.
