Step 1
Preheat the oven to 200°C (fan 180°C, gas mark 6). Bring a kettle of water to the boil and brush a baking tray with the coconut oil.

Step 2
Pour enough boiling water into a saucepan to fill it halfway and place over a medium heat. Put your large midget tree (broccoli head) into the water, leafy side down. Whack a lid on the pan (chop the end of the stalk off if you can't fit the lid on) and steam for 2-4 minutes, until just soft. Drain and re-fill the pan with cold water, to cool down the broccoli and halt the cooking. When cold, shake off all the water and chop it finely.
Step 3
Put the chopped broccoli, grated cheese, onion, parsley, breadcrumbs and egg into a bowl. Season with salt and pepper, then use your hands to work it all together. Roll into 12–14 tots and place them onto the oiled tray. Bake at the top of the oven for 15 minutes until golden brown.
Step 4
While the tots are baking, toss the rocket and yellow pepper together with the lemon juice. Season to taste with more salt and pepper.
Step 5
Pile the tots on a plate, put the salad on one side and serve with ketchup
