Indonesian Veggie Yellow Soto (Soto Kuning Sayur)

Soto refers to aromatic Indonesian spiced yellow soup that consist of shallot, garlic, lots of turmeric, ginger, and candlenut. It is one Indonesian favorite hearty-easy-comfort food. Tempeh as a source of complete protein and other vegetables provide lots of awesome nutrients.
Note: If you like less spicey, just add more water and adjust the seasoning. Glass noodle can be added as a source of carbs too.

Instructions
Blend Soto Paste
Step 1
Combine all paste ingredients in a blender and blend until smooth.
Making Soto
Step 2
Stir fry the soto paste until well browned.
Step 3
Add water and all the aromatic ingredients.
Step 4
Add roasted tempeh, seasoning, and carrots into the soup.
Step 5
Simmer for 15 minutes.
Step 6
Add in the rest of the vegetables.
Step 7
Simmer for another 5 minutes.
Step 8
Done.
Serving
Step 9
Serve with sliced scallion and parsley.
Step 10
Squeeze some lime juice according to taste.
