Instructions
Step 1
Heat the oil in a pot over a medium flame
Step 2
When hot, add the onions and chillies and cook for 10 minutes, stirring frequently, until the onions look like pink Jewels.
Step 3
Stir in the garlic, cook for 2 minutes, then add the tomatoes.
Step 4
When the tomatoes have broken down and become paste-like (around 5 minutes), add the salt and spices, and stir-fry for a minute.
Step 5
Pour 1 litre of water into the pot, bring it to a boil, then turn down the heat to medium and leave to bubble away for 8 minutes
Step 6
Stir in the beans, peas, chickpeas and mangetout, cook for about 5 minutes, then take off the heat.
Step 7
Mix in the lemon juice and coriander, taste and adjust the seasoning if need be.
Step 8
Divide the peas and legumes between four bowls, ladle the spiced broth on top and serve.
