cut into thick slices, to save time, you can replace the fresh peppers with a jar of chargrilled peppers
1red onion

drained and rinsed

Instructions
Step 1
If using fresh red bell peppers: cut into quarters or sixths, place on a lined baking tray, brush with olive oil, season and roast at 220°C for 30 minutes.
Step 2
Put all the ingredients into a large, shallow casserole. Add 200ml water.
Step 3
Bring to a boil and transfer to a preheated oven at 180°C for 1 hour.
