Ingredients

1 Tbspdark soy sauce
1 tspfish sauce
3 Tbspoyster sauce
½ Tbspcoconut oil
3spring onions
cut into 2cm diagonal lengths
2cloves garlic
crushed
1red chilli
de-seeded and finely chopped
200graw peeled tiger prawns
4shiitake mushrooms
sliced
50gmidget trees
tenderstem broccoli, thinly sliced lengthways
2baby pak choi
halved or quartered if large, or roughly chopped
250grice noodles
cooked
Instructions
Step 1
Mix the soy sauce, fish sauce and oyster sauce in a bowl and set aside.
Step 2
Melt the oil in a large non-stick frying pan over a medium heat. Add the spring onions, garlic and the chilli and stir-fry for 20 seconds.
Step 3
Chuck in the prawns, shiitake mushrooms and broccoli. Stir-fry for 2-3 minutes, then add the pak choi and the sauce mixture. Stir and cook for about 2-3 minutes over a high heat, until the prawns turn pink and are cooked through, adding a splash of water if the sauce becomes too thick.
Step 4
Stir in the noodles, remove from the heat and toss to mix well. Serve in a warmed bowl and tuck in with your chopsticks.
