Broccoli and Bell Pepper Scramble
Heat coconut oil in a pan over medium heat. Add chopped peppers
and chopped broccoli to the pan and cook for 3-4 minutes. Add
lightly beaten eggs to the pan, and scramble mixture until eggs
are fully cooked. Season with sea salt and pepper, to taste.
*Not a fan of broccoli, bell peppers, or both? You can use 1 cup of
broccoli or bell peppers (instead of ½ cup of each), or you can easily
substitute other vegetables in this omelet. Mushrooms, tomatoes,
zucchini, or onions work well as substitutes.
