Japanese Croquette Bao with Curry Sauce

These dippy, drippy Japanese Croquette Bao served with a Japanese Curry dipping sauce is a little messy but OH SO SATISFYING! The savoury coating of the curry paired with crispy croquette, pillowy bao, homemade sweet and tangy tonkatsu sauce and crunchy fresh cabbage just makes this so good.

HOMEMADE TONKATSU SAUCE
Instructions
Step 1
FIND THE RECIPE FOR MY JAPANESE CROQUETTES ON MY WHISK! Shred your cabbage (use a veggie peeler for fine shreds).
Step 2
Mix all tonkatsu sauce ingredients in a small bowl.
Step 3
Steam your bao buns for 8 mins or according to packet instructions.
Step 4
Make the curry sauce by bringing two cups of water to the boil. Stir in the cubes til dissolved and sift in the cocoa powder. Allow to simmer until it's reached your desired thickness - I find it's best if you make it a little runnier than you think. Strain into two small bowls for serving.
Step 5
Cut all croquettes in half and assemble your bao! Dip in the curry sauce to enjoy!
