Instructions
Step 1
Heat oven to 200°C/180°C fan/gas
Step 2
Cut a large rectangle of foil, big enough to make a large envelope.
Step 3
Put the pak choi on the foil, followed by the fish, then the ginger and garlic.
Step 4
Pour over the sauce and rice wine, then season.
Step 5
Fold over the foil and seal the three edges, then put on a baking sheet.
Step 6
Cook for 20 minutes, open the parcel and scatter over the spring onions and coriander.
Step 7
Serve with lime wedges to squeeze over.
