Delicious with any firm-fleshed fish, the stew works with cod, grouper, catfish, and similar choices. Just make sure you go low mercury. Instructions

Step 1
Place the fish in a small bowl, and cover with the lime juice, garlic, salt, and pepper. Marinate for 15 minutes.
Step 2
Sauté the onion, paprika, and red pepper in the coconut oil on medium-low for 5 minutes until soft. Add the tomato and marinated fish, and cook until the fish begins to turn opaque, about 5 minutes.
Step 3
Add the coconut milk, hot sauce, and half of the cilantro. Simmer until the fish is fully opaque and begins to flake, about 10 to 15 minutes. Taste for seasoning. Add more lime juice, hot sauce, and salt to taste.
Step 4
Add the remaining cilantro and serve.
