Step 1
Cook quinoa: add to pot with salt and 2 cups water. Bring to a boil, then simmer for 10-15 minutes.
Step 2
Meanwhile, cut peppers in half, remove seeds, sprinkle with salt and olive oil, and roast until soft.
Step 3
When quinoa is done, mix all ingredients except for peppers with quinoa, and season with salt and pepper.
Step 4
Stuff quinoa mixture into peppers, and eat
