Onion Bhaji Burger With Coconut Raita

Instructions

Step 1
Preheat Oven to 200c. Cut the Potatoes (Skins on) into chips. Add to baking tray with drizzle of oil, salt and pepper. Put in oven for 25-30 minutes.
Step 2
Peel the onions and slice as finely as you can. Crush the garlic and chop the coriander roughly (including the stalks)
Step 3
Add 60g flour to a large bowl with the cornflour, curry powder and a pinch of salt. Add 100ml of cold water and mix to a smooth thick batter.
Step 4
Add the onion, garlic and coriander to the batter and mix together.
Step 5
Heat a wide pan, when hot add 4 large spoonfuls of the onion mixture and press down with the back of the spoon to flatten them. Cook for 3-4 minutes on each side- once done leave them to the side.
Step 6
Grate half the cucumber and dice the rest. Add the grated cucumber to a bowl with the coconut yoghurt and a pinch of salt.
Step 7
Wash and then add the baby leaf salad to a bowl with the diced cucumber and a small drizzle of olive oil.
Step 8
When the chips are done, remove from oven and sprinkle over chili flakes. Slice the brioche buns in half and add them to the tray. Put back in oven for 3-4 minutes.
Step 9
Spread a dollop of the coconut raita on the base of the warmed brioche bun. Stack them with the patties, mango chutney, cucumber salad and coconut raita. Serve with the chilli chips and cucumber salad.
