Instructions

Step 1
Make masala by frying some onions, adding ginger garlic paste, tomatoes, green chillies and the dry spices (salt, red chilli flakes and turmeric powder)
Step 2
Add chopped potatoes and cook on high heat for few mins. Add a few tbsp water if needed and turn heat low and cook for 10 mins (If you’re making it with chicken instead, add 500g boneless chicken and fry until it changes colour and then cook on low heat until cooked through. Rest of the steps are the same)
Step 3
Chop spinach and pour boiling water over it to soften it. Drain the water and add to the masala. (I used baby spinach. If you are using normal spinach, chop it, put it in water bring to boil and let it simmer for 5mins. You can also used canned spinach)
Step 4
Mix the spinach, add coriander and cumin powder along with fenugreek leaves and cook on low heat for further 15mins.
Step 5
Turn heat high and dry the masala if it is too watery.
