8potatoes
large, cut in 1/4 inch thick & round

2tomatoes
medium, sliced

2onions
large, finely chopped

1 Tbsginger & garlic paste

8red chilli

10curry leaves

½ tspnigella seeds

½ tspblack mustard seeds

½ tspfenugreek seeds

1 tspfennel seeds

1 Tbscumin seeds
dry roasted and crushed

1 ½ tspsalt

2 tspcrushed red chilli

½ tspturmeric

2 Tbsdry fenugreek leaves

3bullet green chilli
sliced

½ cupoil
Instructions
Step 1
1: heat oil add, fennel seeds, mustard seeds, nigella seeds, fenugreek seeds, curry leaves, whole red chilli and fry on high flame.
Step 2
2: then add onions, ginger & garlic paste and fry till light golden on high flame.
Step 3
3: now add tomatoes, turmeric, crushed red chilli, salt mix and cook on high flame till the oil comes on surface.
Step 4
4: then add potatoes, water 1&1/2 cup mix and wait for a boil on high flame, then lower the flame to medium cover and cook till the water dries and potatoes cooked.
Step 5
5: now add dry fenugreek leaves, cumin crushed, green chilli mix.
