Bahama Penne & Seared Mahi-Mahi

Try this tasty pasta, using traditional Bahamian ingredients. If you can not find mahi mahi fish in your local shop, it can be substituted with other white fish alternatives such as cod. The flavours are so fresh and the heat of the chilli balances with the fruit. This recipe was tested and photographed by Jackie Wilson - a Registered Dietitian

Instructions

Step 1
For salsa, place lime juice, wine, half of the pineapple chunks , half of the mango chunks, all the green onions and most of the coriander in bowl of food processor or blender container. Pulse to coarsely chop and blend.
Step 2
Was fish fillets; pat dry. Place 1/2 of the salsa in glass dish (or food-safe plastic bag); reserve remaining salsa. Add fish; turn to coat with salsa. Refrigerate, covered for at 15-30 minutes.
Step 3
Meanwhile, cook pasta according to package directions. Drain and leave to one side.
Step 4
Heat oil in large nonstick skillet over medium-high heat until hot. Add peppers and garlic; cook until sizzling, about 1 minute. Remove fish from salsa. Place fish in skillet. Cook about 2 minutes until browned; turn and cook 2 minutes to sear on both sides. (Reduce heat if browning too quickly.)
Step 5
Pour reserved salsa around fish. Continue cooking 4 minutes or until cooked through (fish flakes easily when tested with fork). Remove fish from skillet; set aside. Add beans to skillet; cook until sauce is desired consistency, stirring occasionally. Remove from heat.
Step 6
Add pasta to skillet; toss to combine. Add remaining chunks of pineapple and mango; toss to combine. Place fish on pasta; sprinkle with the rest of the coriander, if desired.
