Instructions
Step 1
Heat 1 tsp oil in a large sauce pan and sauté onion for 5 minutes.
Step 2
Add celery and carrots and continue to sauté for another 5 minutes.
Step 3
Stir in curry paste and broth. Bring to a boil then reduce heat and simmer for 5-7 minutes, or until carrots are firm but not fully cooked.
Step 4
Add beans, briefly bring the stew to a boil, the reduce and simmer for another 3 minutes.
Step 5
Reduce heat to low and gently set fish into stew, just below the surface. Poach fish for 1-3 minutes, until it flakes apart.
Step 6
Season with sea salt and pepper.
