Instructions

Step 1
Cool the rice. Leave in fridge for 1 hour.
Step 2
Heat very small amount of oil in pan over medium heat. Add dice chorizo and cook until all the fat comes out. Dispose of fat.
Step 3
Add onion and capsicum for 5 minutes or until soft. Add garlic and chilli powder.
Step 4
Turn to lowest heat. Add rice, beans and corn. Add crumbed feta and diced coriander. Serve with lime wedges.
