Instructions
Step 1
Cook fettuccine according to the package directions, reserving 1 cup of the pasta water; set aside.
Step 2
While pasta is cooking, add olive oil to a large pot over medium-high heat.
Step 3
Saute garlic for 1 minute, being careful to not burn the garlic.
Step 4
Add sun-dried tomatoes, diced tomatoes, tomato paste, and sugar, stirring until well comined.
Step 5
Reduce heat to medium-low and whisk in cream and sour cream.
Step 6
Let simmer and thicken for 5 minutes.
Step 7
Add spinach to sauce and cook until wilted.
Step 8
Add salt and pepper to taste, if the sauce is too thick, use reserved pasta water to thin it out.
Step 9
Add pasta to prepared sauce and toss until coated.
