Pasta is one of the most famous italian dishes. It is easy to make and most of the times all the ingredients are sitting in the fridge. This version is the traditional amatriciana sauce.

Chop the onions.

Cut the guanciale in thin slices.

Warm a spoon of oil in a large pan. Keep the heat low and eas down both the onions and the guanciale. When are both translucent, take them out of the pan.

Ease down the tomato sauce, increase the heat and cover the pan. Let the sauce on the stove for about fifteen minutes.

After this time is passed, put back the guanciale and the onions into the sauce. Stir the sauce and taste it for salt or pepper. Decrease the heat.

In the meantime prepare the pasta. Cook it in salty boiling water as long as indicated on the box. For this dish it might be better to choose a long type of pasta.

When the pasta is cooked, strain it and ease it down in the sauces for 2 minutes. After this time, add 3/4 of the grated pecorino and stir.
Serve the pasta with the grated pecorino left.
