Ingredients
2 servings

945mlveg stock

1 stalklemongrass
minced

3lime leaves
or 1 grated lime zest

4cloves garlic
minced
1red
chilled finely sliced or 1/2tsp crushed chilli

fresh shiitake mushrooms

200gbroccoli florets
or anything other greens

cherry tomatoes

0.5can coconut milk

3 Tbspsoy sauce

1 Tbsplime juice
fresh squeezed

coriander
chopped

½ tspsugar
Instructions
Step 1
Place stock into deep pan and bring to boil
Step 2
Add lemongrass and boil for 1-2 mins. If using fresh lemongrass add stalks for extra flavour.
Step 3
Add lime leaves, garlic, chilli & mushrooms. Reduce heat to medium and simmer for 1-2 mins.
Step 4
Add broccoli & cherry tomatoes. Simmer 3-4 mins
Step 5
Reduce heat to medium-low and add coconut milk, sou sauce & lime juice: stir well to combine and gently simmer till hot.
Step 6
Taste test - season until it’s to your taste. Add more coconut milk to make it creamier or if it’s too spicy!
Step 7
Serve in bowls with fresh coriander.
