Instructions

Step 1
In a large pot over medium heat, add your oil, onion, shallot, sliced tomato, lemon zest and juice, tomato paste, and preferred protein, making sure everything is fully cooked ( about 10 minutes)

Step 2
Add your seasoning, spinach, and toss, pour in the wine if using and cook for 5-10 minutes until the alcohol simmers out, then add the broth and parmesan cheese rind. Bring to a simmer or slight boil (basically, until you can no longer find the rind).

Step 3
Then we're ready to add in the pasta. Cook to package instructions, while those cooks add in the cream and stir. When the pasta is ready, you're ready to eat! Serve up a bowl top with extra cheese, fresh herbs, and more red pepper flakes if desired. Serve with garlic bread. Enjoy!
