Ingredients

1 ½ cupswheat berries
½ teaspoonsea salt
3oranges
4 teaspoonssherry vinegar
2 teaspoonsdijon mustard
1garlic clove
minced
¾ teaspoonsweet smoked paprika
¼ teaspoonblack pepper
3 tablespoonsextra-virgin olive oil
1 x 15 ouncecan chickpeas
rinsed
3 ouncesbaby spinach
chopped
1red onion
small, sliced thin
⅓ cupfresh mint
minced
Instructions
Step 1
Bring 4 quarts water to boil in large pot. Add wheat berries and 1/2 teaspoons salt, return to boil , and cooks until tender but still chewy, 1 hour to 1 hour 20 minutes. Drain wheat berries, spread onto rimmed baking sheet, and let cool for about 20 minutes.
Step 2
Meanwhile, cut away peel and pith from oranges. Cut each fruit into quarter, then slice each quarter into 1/4-inch-thick pieces. Transfer oranges to bowl.
Step 3
Whisk vinegar, mustard, garlic, paprika, pepper, and salt together in large bowl. Whisking constantly, slowly drizzle in oil Add wheat berries, chickpeas, spinach, onion, oranges, and mint and toss gently to combine. Season with salt and pepper to taste, and serve.
