Ingredients
4 servings
1 ½ cupsgreen lentils
rinsed
1avocado
cut into cubes
1 cupgarden rocket
1 cupbasil leaves
1 cupunsalted roasted sunflower seeds
Dressing Ingredients
Instructions
Step 1
Cook 1 cup lentils in your favorite veggie broth or stock, throw in a bay leaf if you have one, and cook the lentils until just tender., about 25 minutes, drain and let cool.
Step 2
Add all of the dressing ingredients, whisk together well in a bowl until emulsified, add the salt, pepper and give it a quick mix.
Step 3
Add the lentils, avocado cubes, rocket & basil leaves, adjust the seasoning and toss.
Step 4
Sprinkle the roasted sunflower seeds on top and serve.
