Instructions

Step 1
Wash the potatoes then place them flat in the bottom of a large pan . They should not be on top of each other . Now fill water until nearly the top you want to see a little bit of dry skin poking out. Sprinkle salt generously around you want some to nestle on the dry skin tops. Now put on high heat and let this bubble and cook until the water evaporates . After ten minutes keep an eye on it so your pan doesn’t burn

Step 2
In a Blender add chopped clean coriander / cilantro garlic salt pepper cumin white wine vinegar olive oil and a dried chili for spice leave it out if you don’t want it spicy . Blend until a beautiful vibrant smooth sauce is made . This is the mojo verde and we will be dunking the potatoes into this

Step 3
Once the water has evaporated from the potatoes gently shake the pan for a minute and the potatoes should get nice and wrinkly . Serve them on a large plate with the sauce in the middle and get dunking
