Why both recipes together, you ask? I like chicken & my husband avoids it when possible. This makes a happy medium for us. I cut chicken into rectangles (strips) and pork into cubes so that we know the difference.

Step 1
Mix cornstarch & water in sm. bowl before starting sauce.
Tempura Chicken
Step 2
Heat up 1”-2” of oil on med.-high (until a drop of water “dances”). Meanwhile, mix tempura ingredients together. Dip cut-up chicken in tempura & gently place in the hot oil, one at a time. (Avoid overcrowding.) Flip over once when golden. Remove to drain on rack or paper bag. Repeat in batches until all chicken is done.
Step 3
Serve with steamed vegetables & white or fried rice.

I am super-sensitive to the metal taste that acid (vinegar/citrus juice) can leech out of metal pan, so I cook this on the stove in a glass pan.
Step 5
This uses easy ingredients (not catsup) to make Chinese restaurant-style sauce.
Step 6
Of course, you can use a deep frier to cook the meat.
