Instructions

Step 1
To a large pot or braiser over medium heat add a drizzle of oil, mixed veggies, onion, pepper, garlic, and mushrooms cook until the onion is translucent and vegetables become tender, add the seasonings, and sesame oil to coat. Once coated add vegetable broth and coconut milk along with the tomato paste and lime juice. Bring to a simmer and let cook for 10 minutes.
Step 2
Once simmering, add the noodle of choice and cook to desired chew of the noodle. Remove from heat and toss the noodles in the sauce, garnish with cilantro, green onion, a drizzle of sesame oil, and more citrus if using, enjoy!
