Ingredients

olive oil
1 bagveggies
mix, broccoli, carrot, and Cauliflower
1onion
minced
1red pepper
roughly chopped
4cloves garlic
minced
1 packageBella mushrooms
sliced
2 tspground ginger
1 canbaby corn
drained
salt
to taste
pepper
to taste
2 tsppaprika
2dried oregano
1 Tbspsesame oil
and more for serving
1 ½ cvegetable broth
1can of coconut milk
2 oztomato paste
or red pepper chili paste, if you like it hot
2limes
The juice from gar if desired
lime
for nish
3 packagesramen
GF noodles, or rice noodles
0.5 bunchcilantro
or parsley
scallions

sesame oil
Instructions
Step 1
To a large pot or braiser over medium heat add a drizzle of oil, mixed veggies, onion, pepper, garlic, and mushrooms cook until the onion is translucent and vegetables become tender, add the seasonings, and sesame oil to coat. Once coated add vegetable broth and coconut milk along with the tomato paste and lime juice. Bring to a simmer and let cook for 10 minutes.
Step 2
Once simmering, add the noodle of choice and cook to desired chew of the noodle. Remove from heat and toss the noodles in the sauce, garnish with cilantro, green onion, a drizzle of sesame oil, and more citrus if using, enjoy!
