Step 1
First, get your water on for your pasta and add a generous amount of salt.
Step 2
Grab a saucepan and get it on a medium heat, once hot put your butter in the pan. We want this to sizzle.
Step 3
Pop your pasta in a pan, if itâs fresh itâll only take 4 mins but for that al dente bite cook it for a minute less.
Step 4
Keep an eye on the butter, donât be scared and take it off the heat too soon. Youâll know itâs ready by the distinct nutty aroma and brown colour, this will take around 5 mins maybe a touch longer. Once done take it off the heat immediately.
Step 5
Stack your sage leaves on top of each other and roll into a cigar, from here chop along the length until youâre left with sage ribbons.
Step 6
Chop your garlic or put it in a garlic press and add to the sauce pan along with the sage.
Step 7
Mix well and add 1/2 a cup of the pasta water, this will ensure that your sauce sticks to the pasta and gives you a lovely silky sauce.
Step 8
Add your pasta and 1/2 of your parmesan cheese and mix well.
Step 9
Serve immediately, pop on some more Parmesan, cracked black pepper, and finish with some more sage.
