Ingredients
2 servings
1cucumber
halved lengthways, deseeded and roughly chopped
1yellow pepper
deseeded and roughly chopped
2garlic cloves
crushed
1avocado
small, chopped
spring onions
chopped
mint
chopped, plus extra to garnish, optional
150gfat-free natural yogurt
plus extra to garnish, optional
2 Tbspwhite wine vinegar
plus extra to taste
green Tabasco sauce
plus extra to taste
chives
snipped
ice cubes
to garnish and serve, optional
Instructions
Step 1
In a food processor or blender, biltz all the ingredients, reserving half the mint and yogurt, until smooth.
Step 2
Add a lite extra vinegar, Tabasco and seasoning to taste, then add a splash of water you like it thinner.
Step 3
Chill until very cold, then serve wina dollop more yogurt, mint, chives and a few ice cubes, if you like.
Step 4
The soup will keep in the fridge for 2 days - just give it a good stir before serving.
