Instructions

Step 1
Tear the butter lettuce into smaller pieces with ribs removed.
Step 2
Thinly slice the red cabbage, carrots, cucumbers and green onions into strips(can use a julienne peeler for the carrots if one is available)

Chop the cilantro and mint
Step 4
Bring a pot of water to boil and cook the vermicelli noodles. Drain and rinse them under cold water and then return them to the pot. Off heat toss the noodles with the sesame oil and salt, then set aside
Step 5
Fill a shallow pan with an inch of water. Fold a lint free tea towel in half and place next to the dish. Make sure your prepared fillings are within reach.
Step 6
Place one rice paper in the pan of water and let it rest for approximately 20 seconds( you want to wait till the sheet is pliable but not super floppy). Lay it flat. Add your fillings and roll like a burrito. Dip in peanut sauce and enjoy.
