Ingredients

2skinless boneless chicken breast
medium or large
3stalks of celery
diced

8 ozsmoked sausage
2 clovesgarlic
two teaspoons minced garlic
1 cupchicken broth
10.5 ozcan rotel
drained
½ cupsour cream
1 teaspooncajun seasoning
1 teaspoonpaprika
½ teaspoonsalt
2 cupsbrown rice
or riced cauliflower, uncooked
1 cupsharp cheddar cheese shredded
8 ozcooked shrimp

Instructions
Step 1
Heat two teaspoons oil in an oven safe pan over medium high heat.
Step 2
Trim and cut skinless boneless chicken breast into about 1-inch pieces. Add the chicken to the pan and cook for 5 minutes. Stir occasionally.
Step 3
While chicken is cooking, chop one small onion and celery. Cut 8 oz of sausage into 1/4 inch medallions.
Step 4
After the chicken has cooked 5 minutes, add the onion, green pepper, minced garlic, and sausage. Cook until veggies are tender, and the chicken is 160 degrees, internal temp. About another 7 minutes for a total of about 12 minutes.
Step 5
Add 1 cup of chicken broth and deglaze the pan. Add one can RoTel (drained), one teaspoon Cajan spice, 1/2 t salt, and 1/4 teaspoon pepper. Add about 1 cup of shredded Sharp cheddar cheese and mix well until cheese is melted.
Step 6
Add 2 cups brown rice. Mix in well. Simmer 10 minutes until rice is done. (if using riced cauliflower had it here but only simmer about 3-4 minutes)
Step 7
.Add sour cream and mix well.
Step 8
Add 8 oz of COOKED shrimp here if desired.
Step 9
Remove from heat and cover 5 min before serving.
