Instructions

Step 1

Remove most (but not all) fat from the meat. Cut into thin strips. Salt on both sides. Sear on medium-high heat in a little bit of neutral oil in small batches until lightly brown. Remove from the pot and set aside.

Step 2 (mirepoix)

Add mirepoix to the oil and beef drippings and fry on medium heat for about 10 minutes until vegetables are soft and onions are translucent.

Halfway into frying (in 5 minutes) add garlic.

Step 3 (spices and sauces)

Return beef to the pot. Add spices and sauces. Cook for a few minutes, mixing everything together.

Step 4 (liquid)

Add beef stock. Cook on medium-low, maintaining a low simmer, for 1.5 hrs.

Cook pasta according to the instructions on the box. Leave it slightly undercooked. Set aside.

Soft boil a few eggs. Cut them in half. Set aside

Ladle a little bit of the broth from the soup into a separate pot and cook detailed, deveined shrimps in it for about 3 minutes. Alternatively, cook shrimps in the main pot directly.

Serving

Step 9
Pile pasta in a bowl, ladle the soup over it, and put cooked shrimp and eggs on top of that. Sprinkle with green onion.
