Vegan Menbosha (Crispy Prawn/Shrimp Sandwiches)

A Korean-Chinese twist on Prawn Toast - with a prawn filling sandwiched between two slices of white bread then fried til crispy. The same filling as my Sesame Prawn Toast but packaged a little different!

160gfirm tofu

100gvegan prawns
made from konjac
2cloves garlic
1 tspfresh ginger
minced
2 Tbspvegan fish sauce
⅛ tspwhite pepper
1 stalkspring onion
1 tspmushroom bouillon powder
1 tspsesame oil
water

Instructions
Step 1
Place all prawn paste ingredients into a small blender or small food processor and blend into a paste - add a few tablespoons of water if necessary. It doesn't have to be completely smooth - a little texture is fine.
Step 2
Working with 2 slices of bread (stacked) at a time, cut the crusts off your slices of bread and then cut into 4 squares. Spread each square with a thick layer of prawn paste so that it covers the entire square, then carefully sandwichh the bread with another bread square and use a butter knife to remove any excess prawn paste from the sides. Repeat until you have sandwiched all your squares together.
Step 3
Heat a few inches of oil until 160ºC in a saucepan and fry the mini sandwiches in batches for a few minutes until golden brown - flipping so all sides cook evenly. Mix the mayo and ketchup together and serve on the side. Sprinkle your Menbosha with a little sea salt and coriander.
