Chicken
1 poundboneless skinless chicken thighs
1 teaspoonkosher salt
1 teaspoonblack pepper
1 tablespooncooking oil
Scrambled Eggs

Instructions
Step 1
Clean and pat dry Chicken Thighs. Season Chicken with Salt and Black Pepper. In a skillet on medium heat, add in Cooking Oil, then add in Chicken. Cook Chicken on both sides for about 4-5 minutes or until done. Set Chicken aside.
Step 2
For Eggs, In a skillet on medium-low heat add in Butter. Once Butter is melted, add in Eggs and scramble. Set Scrambled Eggs aside. Do not season Eggs.
Step 3
In a skillet on medium heat, add in Cooking Oil and Butter. Once Butter is melted, add in Diced Onions and cook for about 1-3 minutes or until onions soften. Then add in Minced Garlic, Peas & Carrots, Green Onion and cook for about 2 minutes.
Step 4
Add in cooked Scrambled Eggs and Cooked Rice. Rice should be cooked prior to starting recipe and refrigerated for at least 4 hours-24 hours.
Step 5
Add in Soy Sauce & Sesame Oil. Dice cooked Chicken and add into dish. Mix all ingredients together, season with Salt & Pepper to taste, and cook for about 2-3 minutes.
