Instructions

Step 1
1. Wash an finely slice the leeks 2. In a large pot, heat the butter and olive oil and add the garlic and thyme 3. Once sizzling, stir in the leeks and 400ml of water then cover and simmer gently over a low heat for 40 minutes 4. Season with salt and pepper 5. When the leeks have 10 minutes to go, cook the pasta according to package 6. Strain pasta, keeping a mugful of the water 7. Toss the cooked spaghetti into the leek pan and remove from the heat 8. Beat the egg 9. Add a splash of the pasta water to the egg and pour into the pasta and toss vigorously (make sure the heat is off so the egg doesn’t scramble) 10. Adjust the consistency with extra pasta water if needed and season to perfection (extra pepper is great) 11. Mix through half the parmesan and serve with more parmesan on top
