Step 1
coat frying pan with canola oil on medium low heat
Step 2
add diced onion to oil and cook until almost soft
Step 3
Cut tortillas into triangles and add to pan
Step 4
Stir tortillas frying evenly about 3-5 minutes
Step 5
in seperate bowl, scramble eggs. Add milk/cream for fluffier eggs
Step 6
add egg mix to tortillas, let rest and cook 2-3 minutes
Step 7
Flip tortillas and cook other side 1-2 minutes
Step 8
Sprinkle on queso fresco, cut into 3rds and plate
Step 9
Garnish with green tomatillo, sour cream, cilantro
