Instructions

Step 1
Cut the onion, bell pepper and carrot into chickpea size pieces and mince the garlic and jalapeño.
Step 2
Heat the oil in a pan and add the onion until translucent. Then add the bell pepper and carrot and fry for around 3 minutes. Add the garlic, jalapeño and spices and cook for another 30 seconds.
Step 3
Add the diced tomatoes and tomato paste, add the broth and let it come to a simmer.
Step 4
Add the lime and tortillas and cook until soft, for about 10 minutes. Then blend the soup and ad all the toppings you can think of.
