Thai Red Beef Curry

Ingredients
4 servings
2garlic cloves
finely chopped
1red pepper
cut into chunks
1aubergine
cut into chunks
4 cmfresh ginger
piece, cut into thin strips
6 TbspThai red curry paste
800mlcoconut milk
3 Tbspfish sauce
2sirloin steaks

Instructions
Step 1
Trim fat from steak. Season steak, cook to taste in frying pan. Cover& set aside.
Step 2
Prepare the veg, ginger and garlic.
Step 3
In frying pan, add a little water and the curry paste. Heat gently for 30 seconds an scrape pan for meat flavour.
Step 4
Add all the ingredients other than the steak. Stir well.
Step 5
Bring to boil then turn heat down and simmer gently for 8 mins. Meanwhile cut steak into strips.
Step 6
Add steak and juices (plus optional spring onions) and cook for another minute then serve with optional basil leaves.
