Instructions
Step 1
Pre-heat oven to 180 degrees
Step 2
Cut the pepper into 1cm squares
Step 3
In a frying pan, add a drizzle of oil and fry the slices of bacon
Step 4
Once the bacon is cooked, take off the heat and cut into 1cm slices
Step 5
Crack two eggs into each tortilla boat
Step 6
Whisk the eggs slightly inside the tortilla boat until they look mixed together
Step 7
Add the pepper and bacon
Step 8
If you like some spice, cut the chilli into thin strips and add now
Step 9
Mix the fillings so that they’re evenly distributed in the egg
Step 10
Cook in oven for 15 minutes, or until the egg mixture is hard (you can push a knife through the top to check – if it’s clear, the egg has set)
Step 11
Serve with your favourite condiment (I’d recommend HP sauce)
