Easy Cheesy mini potato gratin using store bought shredded potatoes (I use Simply Potatoes and you can find them in the dairy section of your grocery store), Gruyère cheese and heavy cream

Step 1
Butter a cupcake muffin pan. Place about three Tbls shredded potatoes in each cup. Next layer about one Tbls of cheese (you can use any cheese of your choice). Repeat another layer of potatoes and cheese two more times but before you finish with the last layer of cheese, pour one Tbls of heavy cream over each cup then finish with the cheese. Don’t worry if your layers are a little above the rim of each cup because the potatoes will cook down a little. Cover loosely with foil and bake at 350* for about 30 minutes or until potatoes are cooked and golden. Serve with chives or sautéed onions on top.
