Instructions
Step 1
Start with toasting the pine nuts in a small pan over a medium heat until golden brown. Make sure you don’t burn them.
Step 2
Place the toasted pine nuts into a food processor and let them cool for a few minutes.
Step 3
Add the garlic, parmesan, basil and pulse several times.
Step 4
Gradually pour in the oil while the food processor is running until a smooth pesto has formed.
Step 5
Season with pepper, don’t worry about the salt as you will get the salt from the pasta water that you will add later on.
Step 6
In a saucepan cook your pasta in a large pot of salted boiling water and cook according to the packets instructions.
Step 7
Drain the pasta and reserve some pasta water for later.
Step 8
Add the pesto into in a large bowl, along with the pasta and a ladle of the pasta water.
Step 9
Stir to coat the pasta in the pesto sauce, adding more pasta water if needed.
Step 10
Serve immediately, with a grating of lemon zest and extra parmesan on top.
