One-Tray Sausage, Greens and Beans Bake with Rosemary Pesto

Instructions

Step 1
Preheat the oven to fan 220°C/Gas mark 9.

Place the oil or butter into a large roasting tray or ovenproof dish and heat it in the oven for 2-3 minutes.

Bring the tray out of the oven and add the onion, tomatoes, sausages, courgettes. most of the lemon wedges, fennel seeds or dried basil and olives. Season with salt and pepper and toss in the hot oil. Spread everything out in a single layer if there's not enough space, put the sausages on top of everything else and roast in the oven for 15 minutes.
