Cauliflower Vegan Stew “Yakhnit Arnabit”

This recipe is for the Meatless version of “Lebanese Cauliflower Stew” or “Yakhnit Arnabit”.
It's delicious, flavorful, and easy to make in about 30 minutes.

Ingredients
6 servings
2 Tbspolive oil
1onion
large, chopped
3 clovesgarlic
finely chopped
1 tspfresh thyme
or dried
800gcauliflower
divided into florets
2potatoes
medium, peeled and diced
100gswiss chard
or spinach, chopped, Optional
6 cupsvegetable stock
1 tspsea salt
or to taste
½ tspallspice
or black pepper
0.5 bunchparsley
1green chili pepper
sliced, optional
Instructions
Step 1
In a large pot, heat 2 tbsp olive oil, sauté the onions with pinch of salt until wilted, stir in the garlic for a minute until fragrant.
Step 2
Add the potatoes, sauté for 2-3 minutes on medium heat, add in the vegetable stock, cauliflower florets and simmer for 20-30 minutes until the potato are tender.
Step 3
Scoop out 2 cups of stew liquid including a full cup of florets & potatoes, put into blender, blend until smooth and return to pot, stir in swiss chard or spinach, simmer 3-5 minutes and season with salt and pepper.
Step 4
Pour the stew into a large bowl, add the chopped parsley and optional green pepper slices on top and serve with vermicelli rice on the side.
