Instructions
Step 1
In a large pot heat 2 tbsp olive oil on med-high heat. Add garlic, turmeric, cumin and onion and slightly brown
Step 2
Add lentils, the rest of the olive oil, stir through until coated in olive oil
Step 3
Pour in water and vegetable stock cubes
Step 4
Add in rice. Cook until rice and lentils are nearly done (about 20min)
Step 5
Add in veggies. Stir all ingredients together and then allow to simmer until all is tender (about 10min).
Step 6
Take pot off heat. Blend with your hand held mixer or blender until soup is smooth. (I like mine smooth - keep chunky if you prefer)
Step 7
Add lemon juice, salt and chilli powder and mix.
Step 8
Serve with added parsley as garnish
