Mdardara / Lentils and Rice With Caramelized Onions / مدردرة

Mdardara is one of the ancient Vegetarian Lebanese dishes, and is lentil and rice, cooked together with olive oil, salt and pepper, and garnished with caramelized onions.

Instructions

Step 1
Wash the lentils well and drain them from the water.
Step 2
We wash the rice well, filter it from the water, then soak it and leave it to soak for a period of an hour.
Step 3
We put the lentils in a pot on high heat and cover it with 3 liters of water, then leave it until it boils and is close to maturity, about 30 to 40 minutes.
Step 4
Peel the onion and chop 10 heads in thinly sliced and 4 heads, chop small diced cubes.
Step 5
Put 6 tablespoons of olive oil in a large saucepan on the stove, then add the diced onions and salt and saute until wilted.
Step 6
After that, drain the rice from the water and add it to the lentils pot as we add fried onions.
Step 7
Reduce the heat, cover the pot, and leave it over a low heat for about 30 to 60 minutes until the rice is tender.
Step 8
During that, put a frying pan on medium heat and put 4 tablespoons of olive oil in it and leave it until it gets hot, then add the thinly sliced onion and keep turning it until it turns golden to brown, then remove it from the heat.
Step 9
Remove the Mdarfara from the fire and pour it into a serving dish, decorate the top with fried onions, then serve.
Step 10
Serve it with green salad &/ or Yogurt.
