Step 1
In a big bowl, add in all purpose flour and salt, slowly pour in warm water to mix. Knead the dough until smooth and elastic, let it rise for 30 minutes.
Step 2
Clean and drain Chinese chives (get rid of as much as much water as possible), chop into small bite size (roughly half an inch long).Transfer to a bowl.
Step 3
Beat eggs in a small bowl, heat up cooking oil in a pan (2tbs cooking oil). Quickly pour in egg batter to make scrambled eggs (slightly under cooked is preferred), transfer to the bowl with chopped chives in. To season the stuffing, simply add in sesame oil, oyster sauce and salt, mix well.
Step 4
Take out fully risen dough, roll it out to a long log. Evenly cut it into 8-10 small doughs, flatted out each dough with hands leaving the center part thicker and edges thinner. Scoop a couple spoons of chives and eggs stuffing inside the wrapper, gently pull up edges and close the wrapper fully. Then flip the side and pat it on a kitchen counter, gently press it into a small and round pie.
Step 5
Heat up cooking oil (2tbs) in a skillet, add in round pie to cook on medium heat with the lid on for several minutes until the bottom turns golden brown. Flip the pie to continue cooking till pie turns fluffy and golden brown. Remove from the heat and serve warm immediately~
