Instructions

Step 1
Sift the flour, baking powder, salt and caster sugar into a large bowl.
Step 2
In a separate bowl or jug, lightly whisk together the milk, egg and olive oil
Step 3
Pour the milk mixture into the flour mixture and whisk until you have a smooth batter. Any lumps will soon disappear with a little mixing.
Step 4
Let the batter stand for a few minutes.
Step 5
Butter the pan lightly and add a scoop per pancake, cool on low/medium heat and once it starts bubbling on top, flip and cook the other side till golden. Add some butter again if needed (Even with one scoop, the pancakes are light and fluffy on inside but you can add two scoops to make the pancake thicker. Ensure heat is low to allow egg to cook properly on inside)
Step 6
Serve with spreads/syrups and fruits of choice and enjoy
