Instructions

FOR THE PANCAKES

Step 1
In a mixing bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the almond milk, egg, melted coconut oil or applesauce, and vanilla extract.

Add the wet ingredients to the dry ingredients and gently mix until just combined. Do not overmix; some lumps are okay.

Preheat a griddle or non-stick skillet over medium heat. Lightly grease the surface with oil or non-stick spray.

Pour the batter onto the griddle for a single pancake. Cook until bubbles form on the surface and the edges look set.

Flip the pancake and cook for an additional 1-2 minutes, until golden brown.
Step 7
Repeat the process with the remaining batter.

FOR THE LAVENDER MAPLE SYRUP

In a small saucepan, heat the maple syrup and dried lavender buds over low heat.

Allow the mixture to warm gently for about 5-7 minutes, infusing the syrup with lavender flavor. Remove from heat and strain out the lavender buds. Set aside.

TO SERVE

Step 10
Stack the pancake on a plate and drizzle with the lavender-infused maple syrup.

Garnish with additional lavender buds or a sprinkle of powdered sugar, if desired.
