Instructions
Step 1
Combine yams, first amount of oil, and brown sugar in medium bowl. Transfer to baking sheet. Bake in 350F oven for 45 minutes, stirring occasionally, until golden and tender. Transfer to large bowl. Set aside.
Step 2
Sauté mushrooms, spinach, and garlic in second amount of olive oil in large frying pan on medium high for 3-5 minutes until mushrooms are softened. Add to yams.
Step 3
Sprinkle feta cheese and pine nuts over top. Drizzle with vinegar. Toss until we’ll coated. Serve warm. Makes 5 cups.
