Instructions
Step 1
Sweat Pancetta with mirepoix for 10 mins approx
Step 2
Meanwhile, puree 1 can of beans with 1 cup of water
Step 3
Add tomato paste to veggies, cook until it starts to brown
Step 4
Add garlic and peperoncino, cook for two minutes
Step 5
Add chicken broth, other can of beans, and the pureed can
Step 6
Bring to a boil, then simmer for ten minutes
Step 7
Cook pasta in broth, as per instructions on the label
Step 8
Once finished cooking, remove from heat, add cheese and herbs, and serve
